Something a bit different.... Soup

Pea and Mint soup to be exact. I've been wanting to include recipes/ food posts on the blog for a while now, but just haven't got around to it. But today that has changed!
I love pea and mint soup for 3 reasons; 1) it's relatively cheap to make 2) It's really quick and easy to make and 3) it has no 'carbs' or anything like that in and you can easily add other ingredients if you want to. (4- it tastes nice!)
All you need is: A bag of frozen (not tinned!) Garden peas, A bunch of fresh mint, 1 chopped onion, a swig of olive oil, some other herbs such as basil/ oregano and salt/pepper to season, 1-2 jugs of stock (stock cube+water) and 1 clove of garlic.



Then to cook all you need it a hob/ saucepan and a blender- I like to use a hand blender as you can blend while it's still hot! So it's quite simple; add to a pan the olive oil and wait until it's hot, add the onion and garlic and cook until softened. Add the frozen peas (about 3/4 of the bag, or more depending on how 'thick' you want the soup to be, keep stirring until the peas look like they are no longer frozen. Then add the stock and all the herbs/ seasoning and continue stirring. Then leave for about 15- 20 mins.

Then it's done! And ready for blending, & should look something like this:
