Pumpkin Pie

It took me two goes to perfect it (as the first was a burnt disaster) but I think I managed to make pumpkin pie! I realize it's a bit late for Halloween- but hey it's in time for US thanksgiving :)
I loosely followed the recipe on the back of my Libby's pumpkin puree tin:

You will need:
1 x Libby's pumpkin puree tin ( Tesco, Waitrose and load of online shops sell them)
3/4 cup caster sugar ( I found mine was about 170-200g)
1/2 tsp salt, 1 tsp ginger, 1/2 tsp ground nutmeg, 1/2 tsp ground cloves, 1 tsp cinammon, 2 eggs, some extra pumpkin flesh (from my carved pumpkin) roasted and cooled then blended, 1 tin of evaporated milk, maple or golden, and either pastry or a premade pie shell.

I was lazy and decided to go with a pre-cooked, premade pie shell, but shortcrust should be fine if making your own

Basically mix all the ingredients together in a mixing bowl, until you get a thick, sludgey consistency, pour in a the pie shell (the mixture makes enough for 2!) and cook in a pre-heated oven at 250C for 10-15 minutes- On The Lowest Shelf!! Then lower to temp to around 170 and cook for another 35-45 minutes. Just keep an eye that it doesn't burn and make sue it's on the lowest shelf as that's how my first disaster happened!

  1. oo, this looks so yummy! I've only tried it once, when I lived in Spain with two American girls who were celebrating Thanksgiving - and it was so tasty! I was surprised.
