Peach Upside down cake

This is the lazy girl's recipe, as I'm using peach slices from a tin, you are more than welcome to cut up 4-5 peaches. But I couldn't be bothered...
Its pretty tasty and easy to make, so one of my favourites. You will need: a whisk (electrical preferred- this is the lazy girl's recipe!), a mixing bowl, some sort of measuring/weighing device, a baking tray.. an oven.
The ingredients are;

100g flour
100g softened butter (non salted)
100g caster sugar (can be changed to soft brown/ muscavado sugar if you choose)
2 tblsp of Spiced Dark Rum (optional)
2  large Eggs
1- 1.5 tins of Peach slices (large tin) or 4-5 fresh peaches sliced.
1 tsp Baking powder
1/2 tsp cinnamon, 1/2 tsp nutmeg

So pretty simple; put the flour, sugar, eggs, butter, rum, spices and baking powder in a bowl and mix until  smooth.
Then butter your baking tray, so that none of the cake mixture will stick and  open the can of peaches- or if your not lazy, get your sliced fresh peaches and lay them in your baking tray of choice, try to completely cover the bottom of the tray, then pour over a bit of extra rum if you fancy, and sprinkle some sugar across the top- no more than a tblsp.
Then pour the cake mixture on. I made the mistake of using a tray slightly too big, which was about 25cm x 25cm, if you are going to use this size, add an extra 25g to the flour, sugar and butter, if you have small eggs, use 3. Once the peaches are covered the mixture is even, put into a preheated oven (a fan one) at 160C for 30 minutes. Take it out and it should look something like this: (the broken bit in the left hand corner was from me being impatient and wanting to taste some)
I love baking as the weather gets colder, nothing better than a warm cake or bread smell wafting from the kitchen on a cold rainy day!
Thanks for reading, I hope you liked this post. Have any of you made upside down cake- do you have any recommendations? I'd love to know what you think!
