It took me two goes to perfect it (as the first was a burnt disaster) but I think I managed to make pumpkin pie! I realize it's a bit late for Halloween- but hey it's in time for US thanksgiving :)
I loosely followed the recipe on the back of my Libby's pumpkin puree tin:
You will need:
1 x Libby's pumpkin puree tin ( Tesco, Waitrose and load of online shops sell them)
3/4 cup caster sugar ( I found mine was about 170-200g)
1/2 tsp salt, 1 tsp ginger, 1/2 tsp ground nutmeg, 1/2 tsp ground cloves, 1 tsp cinammon, 2 eggs, some extra pumpkin flesh (from my carved pumpkin) roasted and cooled then blended, 1 tin of evaporated milk, maple or golden, and either pastry or a premade pie shell.
I was lazy and decided to go with a pre-cooked, premade pie shell, but shortcrust should be fine if making your own
Basically mix all the ingredients together in a mixing bowl, until you get a thick, sludgey consistency, pour in a the pie shell (the mixture makes enough for 2!) and cook in a pre-heated oven at 250C for 10-15 minutes- On The Lowest Shelf!! Then lower to temp to around 170 and cook for another 35-45 minutes. Just keep an eye that it doesn't burn and make sue it's on the lowest shelf as that's how my first disaster happened!
Did any of you make a pumpkin pie for Halloween? Now that I have I'm definitely going to try it again! Does anyone have any tips or tricks!?
oo, this looks so yummy! I've only tried it once, when I lived in Spain with two American girls who were celebrating Thanksgiving - and it was so tasty! I was surprised.
